Foricher Flour, La Boulangerie & Co, Fresh Frozen Pastries...
Dear Far Breton Bakery Community,
It's been a minute since my last blog post - and I'm happy to announce several new collaborations, additions to the bakery, and how we are adapting the bakery to bring you the highest quality bakery at the best price!
Firstly, I'm thrilled to say that we connected with Foricher Flour via Instagram, a top tier flour milling company that produces a variety of specialty flours specifically for artisan bread baking. I'm very pleased to say that this weekend's batch of croissants is made entirely of their flour grown and milled in rural France. Why is this flour so special?
- Stored with fresh air ventilation
- No insecticides during storage
- Products are inspected and traced from the fields through to shipping
- Encourages farming practices that are favorable to biodiversity
- Excludes the use of glyphosate in open fields
- Offers a premium to Breton farmers
Going forward, Far Breton Bakery will be using this excellent flour for our viennoiseries (pastries). We will absorb the higher flour cost into our existing pricing so that you can experience an even higher level of fantastic bakery within the budget here at Far Breton Bakery!
Additionally, our contact for Foricher Flour is also La Boulangerie & Co. (Chicago) who also uses this organic French flour and makes the BEST bread we've had stateside. We are now featuring four new types of their bread, finished in our ovens here and available all day long.

Finally, I have spent some time considering what my bakery can do to make a positive difference for our community. As a very small business, my powers, beyond offering delicious bakery, coffee, crepes, and a cozy cafe spot, are limited. However, as of today I now have access to affordable eggs and will be reducing prices back to down to make our bakery more accessible to more of our community. Additionally, we now have "Fresh Frozen" pastries available for sale behind the counter that are discounted 25%. See Hannah or myself for the details!
We have a month to go before Dane County Farmers Market kicks off on April 12, 2025! We look forward to seeing you there or here at our storefront!
