Our Story
Marie-Arzel Young
Far Breton Bakery is the latest bakery endeavor of Marie-Arzel Young (The French Confection & Marie's Original Bakery (2003 - 2009; Eau Claire, Wisconsin).
Marie's maternal family hails from Brittany, France and she spent summers with her maternal family on Isle de Noirmoutier, the Loire Valley, and the Aix-en-Provence regions of France. Most of Far Breton Bakery's products are strongly influenced by her childhood experiences in France and Luxembourg.
A professional pastry chef since 2000, Ms. Young has previously worked at the Ovens of Brittany, L'Etoile, Harvest, and Samba Brazilian Grill. Her culinary mentors include Chef Paul Short, Chef Remy Funfrock, and Odessa Piper. Marie’s first Proustian memory was while working at L’Etoile under Odessa Piper, where she was transported to her memory of her first all butter croissants at her French grandmother's table. Her ultimate goal with Far Breton Bakery is to re-create historical taste memories, also known as Proustian memories. These involuntary memories can help create feelings of connectedness to positive memories, contribute to the community’s collective sense of worth, and a deeper sense of the meaning in life.
